What sets apart a Lebanese roast turkey from that made in, say the US or British isles, are the condiments and sides and the wealthy spice rub that the turkey is infused with.
The typically Western trimmings of mashed potatoes, stuffing, roasted root veggies and cranberry sauce are conspicuously missing.

Lebanese-fashion roast turkey with rice
Cooking time: 4 hrs 30 minutes

8-10kg full turkey cleaned
