Recipe: Vitamix Tortilla Soup –

1/4 modest white or yellow onion

Increase water, chicken bouillon powder and Southwest spice blend and switch on soup purpose if your Vitamix has that setting. If not, blend on the greatest speed about 5-6 minutes or until steam escapes from the vented lid.

Incorporate cheese, beans, corn and tortilla chips and convert to Variable Pace 3 blend about 10 seconds. You want these included components to be relatively chunky. Style and modify seasoning, adding salt, if essential. Serve with tortilla strips, a dollop of bitter cream and a lemon wedge.
