Meatbawl’s is just just one of the 20 foods trucks that will be using to Jones Park Saturday for the fest. The truck’s operator and chef Shatanya Clarke talked with WLOX Friday about how excited she is about the celebration and just how considerably perform she and her husband have put into the foodstuff truck around the decades.
Her vision for bringing delightful, reliable Jamaican foods to South Mississippi started out when she and her husband decided to establish their food stuff truck from the ground up.
“I had to be genuine with myself. I couldn’t find the money for to buy a massive meals truck, so I designed my individual,” Clarke said. “It’s been really awesome. I’ve learned a ton. I have learned from my community. A ton of folks have occur out to enable us, so with my husband’s assist- I promise you, he’s the muscular tissues of this- we have actually crafted all of this.”
Clarke states she herself isn’t Jamaican, but she’s been in a Jamaican family members for 20 years. She figured out how to cook from her mother-in-legislation.
“I notify folks all the time: I’m not a chef, I’m a story teller. I really don’t alter any of the recipes,” Clarke stated. “My mom-in-law taught me how to do it. I do it just the way she taught me.”
