Fresh new twist on viral TikTok pasta breathes life into popular dish

An Australian home cook has added her own delicious twist to the viral TikTok pasta recipe.

The original viral video sees cherry tomatoes and feta baked in the oven, then the pasta is stirred through with water before it is cooked again to make a simple, delicious meal.

But the TikTok star behind the ‘cookingwithayeh’ channel decided the dish could be done differently – using mushrooms and spinach instead.

The young woman takes mushrooms, thyme, extra virgin olive oil and red onions and put them in a baking dish with a block of feta cheese.

As with the original video the cheese is placed in the centre of the baking dish – and the whole thing is placed in the oven.

Then once it comes out Ayeh mixes the now soft, melted feta through the rest of the ingredients.

She also adds a few cups of baby spinach to the dish before sprinkling her pasta on top.

She adds water again and then places the dish in the oven again.

When it comes out it looks creamy and delicious, and her face reveals her delight as she takes her first bite.

 ‘I tried this version and it is so good,’ one woman said.

‘This one looks amazing, I will definitely be trying it,’ said another. 

But not everyone was pleased with it – one man criticised the young woman for calling it her own dish.

‘Your baked feta pasta? You mean the same dish overtaking everybody’s FYP? YOUR pasta? It is the same dish as everyone else’s,’ he wrote.

But he was quickly told to ‘cool down’ by other pasta fans.

‘Time to go outside my dude,’ one person said. 

This isn’t the first time the viral pasta has had a makeover mum-of-four Melinda, from Sydney, shared images to the Budget Friendly Meals Australia Facebook group and revealed she included shredded chicken to the dish.

The recipe is easy to make and requires a number of ingredients – a block of feta cheese, cherry tomatoes, garlic, oregano, pasta, chicken breast, chicken stock cubes, olive oil and parsley for garnishing.

Earlier this week television presenter Jules Sebastian also jumped on the food trend that has been so popular, feta cheese reportedly sold out in Finland.  

To make the delicious meal, Melinda preheated the oven at 220 degrees Celsius and placed the feta and tomatoes in a baking tray with a drizzle of olive oil.

She then added a sprinkle of Italian herb seasoning, salt and pepper and minced garlic before cooking for 25 minutes.

While the ingredients were baking in the oven, she prepared the pasta.

Once the feta was golden, she used a potato masher to ‘mash’ the cherry tomatoes and feta together.

The pasta was then drained and stirred into the feta mixture along with a cup of pasta water for flavour. 

The chicken was cooked in the pressure cooker with stock water, salt and pepper, Italian mixed herbs and Vegeta seasoning for 25 minutes.

The pressure cooker appliance cooks the food at a faster rate compared to a standard oven.

When the meat was ready Melinda used two forks to shred the chicken into pieces to add to the pasta.

Melinda said the meal was a ‘huge hit’ with her young children and highly recommends it to others.

‘I loved it! But because there’s so many of us [I used] two blocks feta and three punnets tomatoes. I also overdid the garlic but oh so yummy,’ one woman said. 

How to make baked feta pasta with shredded chicken

Method

Preheat oven 200 degrees Celsius fan forced

Add feta and tomatoes to baking dish with a drizzle of olive oil and a sprinkle of Italian herb seasoning and salt and pepper 

Add minced garlic and cook in the oven for 25 minutes 

While the feta is cooking, prepare the pasta 

For the chicken, mix the stock cubes in water until dissolved 

Add the chicken to the pressure cooker and add in stock, salt and pepper, Italian herb mix and Vegeta

Cook the pasta and chicken for 20 minutes 

Drain the pasta 

Shred the chicken using two forks 

Remove the feta from the oven and ‘mash’ using a potato masher or spoon to mix the cheese with the tomatoes 

Add the pasta and chicken to the feta mixture and serve
