Berry sbiten and cookies for a Russian-style winter season evening (RECIPES)

In the chilly year, it is tempting to wrap you up in a blanket with a warm cup of a thing. Following time, do it with an aged Russian recipe.

In Europe, hot chocolate is particularly preferred in winter, but in Russia, since time immemorial, people today have prepared a unique beverage built of herbs, berries and honey, known as sbiten. It applied to be prepared in a samovar, but presently a cooker and saucepan will suffice.

Sbiten is undergoing a resurgence in Russia — it is offered all over the place from espresso homes to restaurants. Oatmeal cookies with cranberries make a quite delicious mixture. The two recipes are easy to adhere to, so there is certainly no excuse not to attempt them!

  • Sea-buckthorn puree – 60 g
  • Raspberry puree – 30 g
  • Chokeberry puree – 30 g
  • Buckwheat honey – 70 g
  • Birch sap – 100 ml

If some substances are missing, feel totally free to experiment. Alternatively of chokeberry puree, use black currant, for occasion, or try replacing birch sap with apple juice.


  1. To make sbiten, you can use either ready-produced puree or clean berries. Crush the berries in a blender, then strain, separating out the more substantial pieces.
  2. Sugar is not included to this consume alternatively use buckwheat honey. In a saucepan, mix the puree, honey and birch sap, and heat for 3-5 minutes although stirring. Provide warm.

  • Wheat flour – 65 g
  • Oatmeal – 30 g
  • Butter – 50 g
  • Milk chocolate – 20 g
  • Cane sugar – 50 g
  • Dried cranberries – 50 g
  • Egg – 20 g (about 50 % a typical egg)
  • Baking powder – 1 g
  • Soda – 1 g
  • Salt – 2 g


  1. Combine all the components with your arms or a spatula. Form into compact balls weighing up to 35 grams.
  2. Spot on baking paper, and bake in the oven at 190°C for specifically 5 minutes.
