Amar Mediterranean Bistro, dishing Lebanese household recipes, opening in Delray Beach

After a globetrotting food career burning brilliant alongside star cooks Bobby Flay and Thomas Keller, cafe proprietor Nicolas Kurban needed to return property yet again.

The Lebanon-born businessman, following 25 years of controlling foods and beverage systems at lodge-casinos from the Borgata in Jersey Metropolis to Wynn Resorts in Las Vegas, craved the easy pleasures of his parents’ residence cooking in Beirut. In late January Kurban ideas to open his newest cafe, Amar Mediterranean Bistro, on Delray Beach’s Atlantic Avenue, with modern Lebanese dishes crafted from previous family recipes.

The 60-seat Amar Mediterranean Bistro at 522 E. Atlantic Ave. replaces the former Scuola Vecchia Pizza e Vino pizzeria, and sits 1 block east of the Delray iPic theater. At minimum 60 guests past 7 days by itself have knocked on the front doorway to inquire about Amar, which convinces Kurban that Lebanese food fills a important void in Atlantic Avenue delicacies.

“When I tell them it’s Lebanese, they say to me, ‘Thank God, it’s about time,’ ” he states. “How several extra Italian restaurants are you going to have on Atlantic Avenue? This spot wants selection.”

Not that Atlantic Avenue is devoid of Mediterranean fare Amar shares the eating drag with mini Greek chain Taverna Opa to the west and other sophisticated eateries (La Cigale, Joseph Wine Bar) to the south and north. Within the 1,200-sq.-foot bistro, around fifty percent the menu will be devoted to incredibly hot and cold mezze, or shareable plates, and entrées start off with toasted pita from Amar’s wooden-burning oven.

(Sheikha el mehchi, its vegan equivalent, substitutes chickpeas for beef.)

Kurban credits his father, Elie, for Amar’s hummus and marinated kebab dishes these types of as hen shish taouk, featuring skewered charbroiled hen breast, charred onions, tomatoes and a Lebanese garlic sauce referred to as toum. Desserts, developed by Kurban’s spouse, Susanna, incorporate tahini chocolate cake and labneh panna cotta.

Kurban received his earliest publicity to Lebanese delicacies as a teenager performing at his father’s restaurant in Beirut, which made available traditional dishes “but was like a Cheesecake Manufacturing facility with pizza, steak and other international things,” he says. After returning to the States in 1999, Kurban invested the upcoming 20 decades in the corporate meals and beverage earth. He opened restaurants in Las Vegas for Wolfgang Puck and Borgata accommodations in New Jersey. He opened outposts of Thomas Keller’s Bouchon bakeries in California and New York, then left to open up 4 Seasons and Kimpton Motels across the planet.

“I was obtaining homesick,” states Kurban, who quit his extravagant life style in 2019 to concentrate on opening Amar.

“I just understood there was a desire for Mediterranean foods below,” he suggests. “With the pandemic not going away, this is one thing I wanted to do something for myself.”
