“I want to be a neighborhood restaurant,” explained Phelan, who grew up in Dublin. “I want to be wholly real. The food speaks for alone – it is straightforward, it’s rustic, it is truly, actually about method. Which is quite essential to me.”

For starters, Phelan would make all the pasta by hand, with the exception of the spaghetti.

“For me, pasta is all about superior technique,” Phelan said. “To me, it’s about building flavors. That is what it’s all about.”

Phelan is an alumnus of the departed Luce Enoteca, which also was in Powell. Whilst attending Ohio Condition College finding out for a diploma in interaction, he said, he made a decision he “wasn’t a sit-at-a-desk guy.”
