Dark biofilm, old food residue: Dauphin County restaurant inspections
The following Dauphin County restaurants were found to have violated Pennsylvania’s health and safety regulations during inspections between Dec. 27-Jan. 2.
Inspections are overseen by the Department of Agriculture. The department notes that in many cases violations are corrected by the restaurant before inspectors leave.
HARRISBURG CHRISTIAN SCHOOL

–Table top can opener had dry food residue on cutting blade which will cross-contaminate next cans to be opened. Manager corrected this deviation by cleaning can opener.
–Missing floor tile in kitchen area is not cleanable.
–Observed old-food residue and crud on outside of food ingredient cabinet in the kitchen area.

–Observed containers of food stored directly on the floor in the walk-in cooler, rather than six inches off of the floor as required.
–Observed non-food grade bags (shopping bags) being utilized to store food in the walk-in cooler and the freezers.
–Observed food employee using manual ware-washing sink as a hand-washing sink.
–Hand-wash sink in the food preparation/ware wash area was observed to be blocked by cleaning equipment (mop bucket, cleaning gloves) and not easily accessible.
–Mops are not being hung to air dry.
–Equipment food contact surfaces and utensils are not being immersed for a minimum of 10 seconds in the chlorine sanitizing compartment of the manual ware-washing sink.

–Cold hold unit with deli meats and cheeses for subs/sandwiches temperature was out of the acceptable range. Temperature = 45F. Manager lowered temperature regulator to ensure acceptable temperature less than 41 F.
–Observed air gap greater than 1/4 inch at bottom of rear door threshold plate which may allow rodent and insect entry into food establishment.
–Servsafe certificate expired December 2019. Facility has 90 days to renew certificate. Extension granted due to COVID-19 mitigation plan in Pa.

–Peanut butter machine, a food contact surface, was observed to have food residue and was not clean to sight and touch. Unable to verify cleaning frequency between uses.
–Food facility did not submit a HACCP plan for approval by the department as required.
–The person-in-charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
–Food facility is reduced oxygen packaging cheeses, which has a potential for clostridium botulinum/listeria monocytogenes, without documenting or monitoring a secondary food safety barrier.
–Raw eggs (in shell) stored above ready-to-eat foods and beverages in the refrigerator located at the front of the facility.
–Plumbing system not maintained in good repair – observed the left hot water handle in the women’s restroom to be non-operational. An alternate restroom (men’s restroom) with hot water is available.
